The very first step is to check safety regulations for the venue they will be using. Here in the UK there are strict fire and safety rules for any venue. This determines the fabric and materials used - i.e. fire retardent. Also, you will need to think what the curtains will hang from as large curtains will be heavy. If they need to move then also consider how this will happen and that it might be done with more enthusiasm than drawing drapes at home. Check if there are any local or online suppliers you can check these things with - they may also stock special wide fabrics for what you need. Final advice from me is to weight the hems to get a good drape - the chain type of curtain weight would be good.
