Hi there, Yes this is a horrible job, but sometimes you have to do it for a customer.I am just about to shorten a pair of hand-made pinchpleats that i made 5 years ago for a lady who has now moved. I would suggest doing it from the top, it is a lot of work but i dont think you can shorten the hem on pinch pleats successfully. It wont take that long and it is always better to get the job right and i think the customers appreciate it in the long run .try listening to a good play on the radio, the time passes quicker and you dont think about all that unpicking. good luck.
